Blueberry Pancake and Vegetable Pancake 藍莓鬆餅與蔬菜餅

Ingredients:
1 ½ cup all purpose flour (or whole wheat flour)
1 cup water (more water thinner cake)
3 eggs
½ TSP salt
½ TSP baking powder
½ TSP baking soda


All kinds of vegetables (chop fine): yellow, red, orange, green sweet pepper, spinach, carrots, cucumber, zucchini, green onions, tomatoes and so on.









Scramble eggs in a big bowl
Add everything in the bowl
Mix all well
Heat flat pan to medium-hot heat
Add peanut oil or butter
Spoon the pancake mixture into the pan









Turn over when top side has some air bubbles
It is done when both sides turn to golden color
Serve when it is hot
The ingredients for blueberry pancake are similar with the vegetable pancake. You only need to add 1 TBSP sugar/molasses, change vegetables to blueberries and use butter to cook

西方人週末早上喜歡吃鬆餅澆上楓糖漿或蜂蜜我用了相似的方式換成小黃瓜或胡瓜等蔬菜做的雜菜餅可利用這道菜加入孩子平時不愛吃的蔬菜讓他們高高興興的攝取均衡營養
 
材料
中筋麵粉
300 (一杯半)
200 (一杯)
蛋三個 

鹽半茶匙
小蘇打粉 1/4 茶匙
各式蔬菜
例如: 青椒菠菜胡蘿蔔等等儘量切細切碎或擦成細絲

做法
1. 大碗中打蛋液
2. 把所有作料加入蛋液大碗攪勻成不粘稠有點稀的麵糊
3. 熱平底鍋轉中火 (這道菜從頭到尾不能比中火熱
否則餅會焦掉)
4. 放花生油轉勻鍋底
5. 油熱後
舀一大湯匙麵糊液入鍋
6. 等餅面上起小氣泡後 (約三分鐘) 翻面續煎
7. 餅面呈好看的金黃色即可起鍋
8. 趁熱食用
或與小米粥等一起吃
 
藍莓鬆餅:
跟蔬菜餅做法
其實類似只是把鹽改成糖把蔬菜改成藍莓把鍋裡的花生油改成奶油,然後
煎餅而已
